Okay, I’m not sure what the best way to cook acorn squash. I split it, seeded it, and it seemed kind of unripe. Baked it for 15 @325. Then stuffed it with a cup of cooked brown rice, a slice of bacon crumbled, and an onion sauteed till just brown. Baked for 20…. still not done. Baked for another 10 @ 350… nope. Broiled for 3 minutes more with the grated parmesan on top and it turned out to be done.
Served it with Ruffino Ducale Reserve. Great match.
