If you don’t want to make a lot, or just feel like making one for a friend, here’s the stripped down version of Christmas Passion.
1 Egg yolk
3 tablespoons sugar 45 ml
1 oz Dark rum 50 ml
1/2 oz Kahlua 25 ml
3 oz cream 75 ml
Whip the yolk and sugar into a custard. Whip in the dark rum and Kahlua. Whip in the cream. In small volumes like this I tend to whip the sugar into the yolk in a small plastic container then just add all the fluids, snap on the lid and shake a few seconds.
Serve over ice. Approximate total calories (using 10%BF cream) 430, 7g. fat.
To put this in perspective there are about 230 calories (i.e. over half) in a Timmy’s Double Double
If you want to make this the way I drink it – I don’t have a much of a sweet tooth, although I do drink the full court press version occasionally – here’s the “Low cal” version for one.

1/2 oz Kahlua 25 ml
3 oz skim milk 75 ml
Serve over ice. Approximate total calories 375, 1g. fat.
